Chef Kazu Oyama, a seasoned culinary artist, brings a wealth of expertise cultivated over more than a decade to his role as Chief Chef at Kappo Shunsui. His culinary odyssey commenced as an apprentice at Yamazato in Hotel Okura Amsterdam, Europe’s first Michelin-starred Japanese restaurant. Mentored by Chef Akira Oshima, honored as a Knight in the Order of Orange-Nassau for his pioneering efforts in introducing authentic Japanese cuisine to the Netherlands, Chef Oyama honed his skills for three years in the art of kaiseki ryori.
Following his tenure, Chef Oyama enriched his repertoire during four years at Yamazato in The Okura Prestige Bangkok, serving esteemed guests including heads of state and royalty. Driven by a dedication to refine his craft and honor his heritage, he spent an additional four years at Yamazato in The Okura Tokyo, a revered landmark in Japan’s culinary landscape.
