Nestled inconspicuously within the bustling food court, this overlooked gem of a Hainanese chicken rice stall is helmed by Wong Liang Tai, affectionately known as Ah Tai. At 64, he brings decades of culinary experience to the table, having been the former head chef at the renowned Tian Tian Hainanese Chicken Rice just a stone’s throw away.
Ah Tai branched out on his own in April 2012, setting up his rival stall after a dramatic departure from his previous employer of 20 years. The result? A culinary showdown that’s nearly impossible to distinguish in terms of quality. Both stalls serve up impeccably poached Hainanese-style chicken that’s tender and flavorful.
The real star, however, is the rice. Cooked in a subtly seasoned chicken stock, it’s fluffy, fragrant, and delicious, with delicate notes of ginger, scallions, and garlic. Adding to the delight, we enjoyed hard-boiled eggs lightly braised in soy sauce. While debates on which stall reigns supreme persist, there’s no denying that Ah Tai’s offering stands tall in its own right.

The chicken at Ah Tai Hainanese Chicken Rice was smooth and tender,but I didn’t find it particularly flavorful. The rice was fragrant, but a bit firmer than I like. The chili sauce was a highlight though – nicely vinegary with a good kick. Overall, a decent Hainanese chicken rice.

Skip the queue, get great chicken rice! Ex-Tian Tian chef Ah Tai delivers. Steamed chicken is juicy, rice fragrant, and chili adds a perfect kick. Upsized portion is generous. Highly recommend!

No outrageous lines here, just a satisfying meal. I highly recommend giving Ah Tai a try. He was afterall the ex-head chef of Tian Tian? Unless his supplier choices are horrendous or Tian Tian gatekept some secrets, I don’t see how much different his chicken will be. Anyhow, Ah Tai’s steamed chicken was succulent and tender, with each bite bursting with flavor. The chili also provided just the right amount of heat, perfectly complementing the fragrant, well-cooked rice. I upsized my chicken rice $7 and the portion was generous, perfect for someone with a hearty appetite.
