Chef Kang’s Noodle House specializes in Wanton Mee, using Hong Kong-imported bamboo pole “jook sing” noodles, free from the usual alkaline taste. The char siew, with its flavourful burnt ends, and the fried pork lard enhance the dish’s richness. Praised as one of Singapore’s best wanton mee, the noodles are perfectly al dente, and the char siew is exceptional. The wantons are meaty and well-seasoned, with a delicate skin, while the flavourful soup reveals a slow-cooked bone broth. Despite slightly higher prices, the quality justifies the cost. The menu is concise, featuring three main items: Noodle with Char Siew & Wanton ($6), Noodle with Shredded Abalone, Char Siew & Wanton ($11), and Pork Belly Char Siew ($12). Notably, the offerings are available only in a dry version.

The wontons themselves were okay – good size and a decent amount of filling, but nothing mind-blowing. It’s pricey for a plate of wanton mee.

I finally made it to Chef Kang’s Noodle House, the hawker stall with the Michelin Bib Gourmand cred. The noodles themselves were good – springy and cooked al dente, just like I like them. They slurped up the sauce nicely, the char siew is tasty too. Quite a complete bowl of wanton mee!

Chef Kang Noodle House is a hidden gem serving up delicious and satisfying noodle dishes. Their broths are bursting with flavor, and the noodles have a satisfying springy texture that’s perfect for slurping. But the star of the show here is definitely the char siu – the melt-in-your-mouth tender pork is beautifully caramelized and bursting with savory goodness. It’s clear they use high-quality ingredients and take pride in their preparation!

Chef Kang’s Wanton Mee shiok sia! Tucked away in an industrial canteen, this place serves up amazing wanton mee. The noodles are springy with that QQ bite, no weird taste, and drenched in a crazy good dark soy sauce. The char siew is melt-in-your-mouth juicy, wantons are packed with meat, and the soup is light and refreshing. Apparently, Chef Kang himself trained these young guys to cook it perfectly. Chef Kang’s Noodle House might be humble, but the food is damn good lah! Don’t skip it!
